High Street Market

High Street Market is a gin-based cocktail with the perfect blend of garden fresh produce and herbal notes. Inspired by the local markets, this trademark cocktail is truly Filipino in every sip.   

Colombo Mule

Inspired by the traditional Moscow Mule, this ginger-based cocktail is a product of Executive Mixologist Ulysse Jouanneaud’s travels. On one of his trips to Colombo, Sri-Lanka, Jouanneaud learned to create perfect cocktails with tea infusions. A perfect fizz is created with a Perlini shaker and gas.

High Street Lounge introduces the trolley service to Manila diners. The trolley features enticing food items which changes throughout the day, providing a new kind of service to the guests. Diners may also choose from the a la carte selection which features simple, bite-sized snacks with robust flavours in well-presented bento boxes.


Originally from France, this heavenly dish is now considered to be a classic Spanish tapas item. Best shared with friends over long conversations and a bottle (or two) of wine. Our chefs in High Street Lounge add a twist to the classic by combining foie gras to the filling for a richer, delicate taste.

Afternoon Tea at the High Street Lounge is always a good idea. Savory or sweet, East or West, Afternoon Tea at the High Street Lounge is a conversation starter. Chef Anthony Collar curates an array of delicate pastries made lovingly in the kitchen daily.
